All In One Breakfast Cups

All In One Breakfast Cup

Serves 3-6


10 slices of bacon
4-6 slices of bread
(I used homemade whole wheat & it was large and I got two per slice, for store bought use 1 slice per pan well)
1/2 cup shredded cheddar cheese
6 eggs (or egg whites)
Salt & Pepper to taste


Preheat oven to 400 degrees F.  Grease 6 wells of a muffin pan with nonstick spray.

In frying pan, cook bacon about 3-5 minutes, until partially cooked, but not crispy.  Transfer to a paper towel-lined plate to catch grease.  Cut out rounds of bread with the top of a drinking glass.  Press bread rounds into greased muffin wells.  Curl a piece and a half (I cut 3 of the bacon pieces in half)  around the bread, positioning it between the bread and the muffin tin to help keep the position.  Sprinkle a small amount of cheese  on top of bread.  One at a time, crack an egg, and place egg over each piece of bread.  Break the yolks slightly (unless you are a sunny side upper).  Anywhere from 12 to 17 minutes.   Add salt and pepper if/as desired.  Bake until eggs are cooked through to your liking (I jiggle the pan and if they move they are so not done for me!) and bacon is crispy.  Run a knife along the edge of each muffin well and pop the egg cups out.  Serve immediately.
